Mouthwatering Workshops Coming to UM-Western
Tuesday, June 21 2005
If you have a sweet tooth, there are three workshops you won't want to miss in July at the University of Montana-Western.

The Parisian Patisserie Window is Thursday, July 21. Students will craft three indispensable treats from the French urban landscape: the classic Lemon Tart, irresistible Éclairs and the little giant among pastries, the Napoleon.

Chocolate Bliss is Friday July 22. Students will make and dip bittersweet truffles by hand, transform a sheet of decadent brownies into a platter of elegant amuse-bouches, and pipe sophisticated chocolate filigree designs. Workshop chocolate lovers will celebrate the end of the workshop with a grand tasting ceremony. This workshop promises to be messy, decadent, extravagant and a truckload of laughs

Creme Brulee and Beyond is Tuesday, July 26. The crème Brulee phenomenon is all too alive in America, and in this workshop students will indulge like never before: the classic vanilla bean brulee, a coffee version, then chocolate of course. Along the way students will learn the classic technique of tempering eggs which crosses over into a whole realm of crèmes: crème anglaise, pot de crème and more.

Workshop instructor Jeremy Sher has worked in Pastry kitchens since 1996 in every area of food service from retail to restaurants to catering to hotels & resorts. In Seattle, he worked with acclaimed Pastry Chef Michel Lallaison at the five-star, five-diamond rated Four Seasons Olympic Hotel, as well as the nationally distributed chocolatier, Dilettante Chocolates. Jeremy was also the resident Pastry Chef at the Château de Saint Julien l'Ars outside Poitiers, France, and has created fine pastries and breads all over the world, including Germany, Ecuador, St. Louis, Chicago and Glacier National Park, Montana. He has taught private and corporate workshops for the past 6 years and holds an A.A.S. in Pastry and Specialty Baking from South Seattle Community College.

All workshops will run 6:00-9:00 p.m. in the UM-Western Dining Services kitchen. The cost is $55 per person, $44 for each additional workshop.
